That Spirited Lot Distillers is a small batch family distillery run by brothers Jon-Paul & Chris Willigenburg. After separate careers in IT and the wine industry, That Spirited Lot is the product of a lifelong dream the brothers had to finally work together. This particular gin is inspired by their time growing up on the Mornington Peninsula or “Ninch” and their travels throughout the globe.
We have served this with a zesty dehydrated lemon and paired it with a local hard cheese! Bowerbird showcases different cheeses for all the seasons, so if your really loving this one make sure to ask Max where you can get some cheese of your own!

The dehydrated lemon is the perfect way to bring out the flavours in the dry gin. It is one of the most commonly used botanicals. Even when not present in the spirit itself, a wedge of it is more than likely to be seen bobbing around in most drinks. Cheese pairings go beyond wine! These are paired together because great cheeses bring out the botanicals and the more subtle notes in gin. You need a fatty cheese to stand up to hard alcohol, and you need a cheese with herbaceous notes that will be complemented (not destroyed) by juniper-forward gin like the Ninch Gin! As you taste, see if you can notice the coriander and junipur in the gin. The cheese will complement these flavours and bring out the earthiness of the dry gin.
