Gin-Gingered Prawns
Ingredients
24 fresh or freshly thawed prawns or large shrimp
4 tbsp butter
1/4 cup green onions chopped
3 tbsp pickled ginger, chopped
1/4 cup gin
1 baguette
Cooking Instructions
Remove the shells from the prawns and set aside. This task is much easier when the prawns are slightly frozen.
Melt butter in a skillet over low heat.
Add the chopped green onions and stir for a minute until slightly softened.
Add the prawns. Cook for 2 minutes or until just translucent.
Add the chopped pickled ginger, a little of the ginger juice from the jar, and the gin.
Cook for one more minute.
Serve immediately with a crusty baguette for dipping.
Gin Infused Tomato Jam!
Ingredients
1 large shallot, minced
1 tablespoon of extra-virgin olive oil
1 tablespoon butter
2 cups or 1 pint of cherry tomatoes
2 tablespoons brown sugar
1/3 cup gin
1 tsp salt
1/4 teaspoon red chile flakes
1 tablespoon red wine vinegar
1 teaspoon fresh oregano leaves, rough chop (or oregano flowers)
Cooking Instructions
Over medium-high heat add oil and butter to pan until the butter foams. Add the shallots and lower the heat to medium.
Add the tomatoes and cook for 3-5 minutes.
As the tomatoes start to break down, add brown sugar, gin, salt and red chile flakes.
Cook for another 10 minutes pushing down the tomatoes with a wooden spoon to smash.
The sauce will begin to thicken. Now add the red wine vinegar and oregano, stirring to incorporate.
Continue to cook for another minute or two and then turn off heat.
Store in a clean glass container until ready to serve.
If making it in advance, store in fridge until ready to use, just be sure to serve at room temperature.

“The Resolution”
Ingredients
2 oz gin
.5 oz simple syrup
.5 oz lemon juice
1 sprig of rosemary
Instructions
Combine all ingredients into a shaker.
Shake, then double strain into large coupe glass.
Top with champagne.
Garnish with rosemary sprig.
“Lady of Leisure”
Ingredients
30mL Dry Gin
30mL Mastiha
5mL lime juice
Splash of grapefruit
Garnish with fresh basil
Instructions
This drink's simplicity is a beautiful thing. A good drink is about balance and this has the perfect levels of bitter and sweet with a delicious herbal aspect from the basil. Best of all it is easily built in the glass with limited fuss so all you have to do is add all of the ingredients in the glass, stir with a cocktail spoon and finish it off with a garnish!
