Magic Mountain 🗻
Our first tasting is the Herradura Plata Tequila from the Sierra-Madre mountain ranges in Mexico.
It is produced from Casa Herradura and aged for forty days in oak barrels before bottling.
Casa Herradura is a family owned business and has been making delicious tequila
since the 19th century! Now that’s some history!
We have paired this rich tequila with a creamy Béchamel Croquette served with a ranch sauce.
Why Are They Paired?
In a wine, you can find 150 different aromas; in tequila, there are more than 600! This allows you to combine it with a larger variety of foods. We certainly can’t let wine and beer hog the limelight when it comes to food pairing... if paired right, food can bring out the versatile flavours in tequila.
The high alcohol content of the Tequila cuts nicely through the cream and richness of the bechamel. The dried onion and vinegar in the ranch bring out the acidity of the tequila making it a nice salty and hearty start to your pallet.
Spices Galore 🇲🇽
Next up is the 1800 Añejo Tequila, which is aged in small oak barrels for over a year before
their release, and bottled in an Inca-esque bottle, a node to traditional Mexican Incas.
This tequila is known as a deep, luxurious spirit made from 100% blue agave, making it one of the smoothest tequilas on the market.
We have paired this tequila with a chorizo tostada with manchego cheese and pico de gallo (salsa).
Why Are They Paired?
The spiciness of the chorizo coupled with the tart acidity of the pico de gallo is a seamless complement to this tequila. The taste of tomatoes, herbs and lemon juice from the pico de gallo bring out the acidity of the tequila nicely creating a delicious and unexpected contrast.
A Sweet Finish
Mezcal is gaining fans all over Australia, so to finish off this tasting we thought it would be
great to give you a much deserved introduction to this delicious spirit making waves!
Mezcal (traditionally spelled ‘mescal’) is a Mexican distilled spirit made from the agave plant.
Tequila is technically a Mezcal, however, there are differences in production techniques and in the
types of agave used. It also tends to taste sweeter and richer than tequila.
This particular Mezcal is the Del Maguey Vida Mezcal from the village of San Luis Del Rio.
We have paired this with a churro - a traditional Spanish dessert! Vamos have made this traditional Spanish street food and given it a “pick me up” by accompanying them with white chocolate parfait with cashew nuts and strawberries.
Why Are They Paired?
Thanks to its high sugar content, Mezcal pairs nicely with desserts. The strawberries bring out the agave and vanilla flavours of the Mezcal while the smokey, dried fruit taste of the spirit work well with the sugary yet savoury churro!
