A Floral Beginning 🌼

The first gin you will be indulging is a floral gin made right here in Victoria!

Floral gins are usually combined with citrus flavours that are a result of the range of botanicals which are used during distillation. Rose petals, chamomile, lavender and bog myrtle are all botanicals used in some of the best floral gins out there providing a silky textured finish that is amazing!

Master distillers at some of the biggest gin brands in the industry putting everything into developing new floral flavours. Looks like were right on trend ;)

We have served gin this with a dehydrated orange and matched it with some delicious Victorian charcuterie to finish it off.

Why Are They Paired?

The gin is served with the orange as the the soft citrus taste of an orange makes a wonderful companion to this gin. It makes for a great sweet and bitter combination and accentuates the slight earthy flavour of the gin. The fresh charcuterie is a great pairing as it allows for the orange and gin to be the main flavours. Notice how the sweet orange and spices from the Gin interact on your palette!

A Zesty Combination 🍋

Next is another local and deliciously classic dry gin! 

Dry gin by far has the longest history with its earliest origins from the middle ages! 

Most of the most famous gins you see around the world hail from the UK, so most think that the English came up with one of our most favourite spirits!The English actually discovered gin when they were fighting the Thirty Years’ War in Holland and saw Dutch soldiers drinking Jenever to boost morale before heading into battle. 

The term “Dutch Courage” was born, and the English brought the idea of making and drinking gin back with them!

We have served this with a zesty dehydrated lemon and paired it with a local hard cheese! Bowerbird showcases different cheeses for all the seasons, so if your really loving this one make sure to ask Max where you can get some cheese of your own!

Why Are They Paired?

The dehydrated lemon is the perfect way to bring out the flavours in the dry gin. It is one of the most commonly used botanicals. Even when not present in the spirit itself, a wedge of it is more than likely to be seen bobbing around in most drinks. Cheese pairings go beyond wine! These are paired together because great cheeses bring out the botanicals and the more subtle notes in gin. You need a fatty cheese to stand up to hard alcohol, and you need a cheese with herbaceous notes that will be complemented (not destroyed) by juniper-forward gin like the Ninch Gin! As you taste, see if you can notice the coriander and junipur in the gin. The cheese will complement these flavours and bring out the earthiness of the dry gin.

A Herbal Finish 🌿

Our final tasting is another local gin with a bit of a kick!

 Most gins that have an extra “kick” contain coriander seeds, locally sourced citrus, peppercorn and native Australian aromatics! All of these flavours combined make this a drink to die for!

Now that your a gin expert, who do you think consumes the most amount of gin? The British or the Dutch? Neither! Its the Philippines who take the lead!There is even a word in central Luzon of the Philippine islands for a game of gin-drinking – “Ginuman.”

This gin is served with a rosemary garnish and paired with a delicious croquette filled with Victorian haloumi and locally made chorizo with aioli.

Why Are They Paired?

The croquette, rosemary and gin bring out the best notes in each other! Powerful, robust rosemary adds a deliciously savoury note to the gin. Thanks to rosemary’s piney flavour profile, it also plays very well alongside the juniper. Rosemary is also part of the mint family so see if you can detect the bitter and acidic difference in the gin.
