Your first tasting is the award winning Craft & Co Grappa. Distilled here in house with grapes sourced from their own vineyard in Bangholme, Victoria.
We have paired this with a Bacco Cheese that is made with hard pressed wine skins wrapped around the outside.

This cheese softens the blow of the liquor and the grappa brings out that wine taste of the cheese.
The “IT” Gin
The next tasting is by far the most popular at Craft & Co! The Gingerbread Gin shows us that it can tate like Christmas all year around and we are 100% fine with that! This is a very unique, unashamedly unfiltered gin which retails all of the warmth from the caverated ginger root, smashed nutmeg and tonka beans! If this doesn’t taste like the most wonderful time of the year, then we don’t know what does.
We have paired this with our gin cheese which is made from leftover juniper after the distillation process.

The soft notes of this cheese allow the bitterness of the Juniper to come out! The Gingerbread Gin goes well with aromatic yet welcoming cheese to deliver a good landing pallet for the different flavours in the Gingerbread Gin.
A Sweet Finale 🍋
Your final tasting most definitely a favourite from Craft & Co locals! The handmade limoncello simply contains the peel of local lemons, HIGH and we mean HIGH- proof spirit and sugar! It’s the absolute perfect finish to any night!
We paired this with the Cafe Latte Cheese. This cheese is aged in ground coffee beans for 4 to 5 months.

The brutness of the cafe cheese will help cut the sweetness of the limoncello. See if you can taste some of that coffee taste in the liquor after you have a bite of cheese. It’s best served with a dollop of honey to bring out the sweetness of the limoncello so get ready for a great taste explosion!
