2019 Guthrie Wild Gruner Veltliner

Our first tasting is the 2019 Guthrie Wild Gruner Veltliner from the Adelaide Hills.

This Austrian grape varietal is fresh & aromatic with notes of citrus, apple & pear on the palate.

The Wild Gruner is all about texture. Perfect handpicked bunches were crushed and destemmed. The berries then spent time on skins before gentle pressing to old french puncheon barrels.

Hiramasa Kingfish Crudo

We have paired this rich wine with a refreshing Hiramasa Kingfish Crudo complimented with fennel, olives, and pistachio.

Why they are the perfect pair

The acidity & freshness of this wine cuts through the oiliness of the kingfish and is matched perfectly with the saltiness of the olives.

2018 Yangara Noir (Grenache) 

Our next wine is the 2018 Yangara Noir (Grenache) from McLaren Vale in South Australia.

It is a medium-bodied wine, that is fruit-forward with notes of red berries.

Charcuterie & Raclette Croquette

We have paired this with a delicious charcuterie & raclette croquette with quince aioli.

Why they are the perfect pair

The dryness of the charcuterie needs to be paired with a fruit-forward juicy wine, still with enough acidity to balance out the richness of the raclette.

2018 Koerner Brother Cabernet Malbec

Our final tasting is the 2018 Koerner Brother Cabernet Malbec from Clare Valley, South Australia.

This wonderful wine is produced by the Koerner brothers. Their wines are produced from fruit grown in Watervale, Clare Valley, with the majority of their grapes coming from the Koerner family vineyard, Gullyview.

Chicken Ballotine in Smokey Mash Potatoes 

We have paired this with Chicken Ballotine.

The chicken Is stuffed with pistachio, prunes and chicken farce then roasted. It is sliced and served with smokey mash potato.

Why they are the perfect pair

This Cabernet blend is medium-bodied with some herbaceous and grassy notes, with chocolate and coffee on the palate, which is matched perfectly to the sweetness of the prune stuffing.
